Torched Mykonos Crab Cakes

Torched Mykonos Crab Cakes
Ingredients:
  • 16 ounce can of lump crab or crab claws
  • 1 egg
  • Seasoned bread crumbs
  • Worchester sauce
  • Lemon
  • Mayonnaise
  • 1 tsp dijon mustard
  • Splash of cream sherry

Take crab meat, mix in bowl together with egg and bread crumbs. Mix until blended. Add mustard, mayonnaise, Worchester sauce and lemon to the mixture. When all is mixed up take a splash of cream sherry. Take the mixture and make into patties and place them on a baking tray at 375 and check every 20 minutes until golden brown.

Optional seasoning to be added i.e, chopped onions, red pepper. Remember there are no rules in cooking.

Cretian Skewered Beef and Lamb Kebabs with Tzatziki Sauce
Ingredients:
  • 4 ounces lamb
  • 4 ounces beef
  • Onions
  • Red peppers
  • Potatoes
  • Feta cheese
  • Yogurt
  • Cucumber
  • Garlic
  • Sour cream
  • Lemon
  • Olive oil

Take your beef and and lamb and cut into nice size cubes, take your peppers, onions, potatoes, and string them on the skewer as if they were daisies on a string. Rub them down with your olive oil, salt and pepper. Place the kebabs on a grill or in the oven at 375 until golden brown or vegetables are soft. Check every 20 minutes.

Homemade Mediterranean Tzatziki Sauce
Ingredients:
  • Half cup plain greek yogurt
  • 2 lemons
  • 3 cloves of garlic crushed and finally chopped
  • 1 cucumber, scoop the seeds
  • ¼ cup sour cream
  • 4 tblsp kalamata olive oil
  • Few crumbs of feta to sprinkle over

Take your yogurt, place in a bowl with your lemons, garlic, cucumber, sour cream and olive oil and mix it all up until you get a nice creamy consistency. Throw it in the refrigerator to chill. When serving the kebabs you take the Tzatziki sauce and pour it over your kebabs and sprinkle them with feta cheese.

Baked Apples The Greek Way
Ingredients:
  • 4 apples
  • Brown Sugar
  • Maple Syrup

Take your apples and remove the core. Take a pyrex dish and sprinkle the bottom with your syrup and sugar. Place the apples in the dish and sprinkle again with sugar and syrup and place in oven at 350 and check every 15 mins. The Greek says you can place the apples in the microwave before placing them in the oven.

Stuffed Shrimp with Crab Meat

Stuffed Shrimp with Crab Meat
The Flaming Greek’s stuff shrimp with crab meat
  • 2 pounds large shrimp
  • 1 pound of crab meat
  • 1 tblsp mayonnaise
  • 1 egg
  • dash cream sherry
  • dash worchester sauce
  • 1 egg
  • 1/4 cup of bread crumbs (pepperidge farm)
  • olive oil
  • 7 garlic cloves
  • 1 stick butter
  • 1 Roasted Red Pepper

Heat pan with olive oil on low heat. Place garlic cloves in the pan and simmer till golden brown. Place the garlic cloves in blender, add butter and blend until smooth consistency.

Butterfly the shrimp, flatten the ends. Mix the crab meat with mayonnaise and salt, egg, bread crumbs and add a dash of worchester sauce and place in the shrimp.

Take your garlic and butter mixture and pour over the stuffed shrimp.

Place the stuffed shrimp with crab meat in the oven on broil at 425 degrees for about 12 to 15 mins

When the stuffed shrimp are done, take the red pepper and used it to garnish the shrimp

Greek Lemon Soup

Greek Lemon Soup
Ingredients:
  • 6 cups chicken stock
  • 3/4 cup of rice (or ozo or small pasta)
  • 1/2 cup freshly squeezed lemon juice
  • salt and pepper
  • 1 handful chopped parsley

Directions:

Bring the chicken stock to a boil in sauce pan. Add in the rice, reduce heat and let simmer until rice is soft (approx 20 minutes). In separate bowl whisk the eggs and add the lemon juice.

Once the rice is done, add the egg and lemon mixture into the sauce pan and keep on medium heat until soup is hot.

Ladle soup into bowls and garnish with parsley.
